Serves: 4
Preparation & Cooking Time: 35 to 40 minutes
Difficulty: Easy

Ingredients

For the soup:

  • 800g pumpkin flesh, peeled and diced (approximately 1 small pumpkin)

  • 1 medium white onion, finely chopped

  • 1 medium carrot, peeled and diced

  • 2 garlic cloves, crushed

  • 1 tsp fresh ginger, grated

  • 1 tbsp mild olive oil or vegetable oil

  • 400ml coconut milk (1 tin)

  • 400ml low salt vegetable or chicken stock

  • 1 tsp mild curry powder (optional)

  • Juice of ½ lime

For the topping:

  • 100g freshly grilled sweetcorn, removed from the cob

  • A small pinch of mild paprika

  • Fresh coriander to garnish (optional)

  • A pinch of salt (optional, for older children and adults)

To serve (optional):

  • Soft bread or toast fingers

  • Beetroot bread or rolls for a colourful Halloween twist

Method

1. Prepare the pumpkin

Peel, deseed and chop the pumpkin into small, evenly sized cubes. If using a fresh Halloween pumpkin, remove the seeds and stringy centre before preparing the flesh.

2. Soften the vegetables

Heat the oil in a large saucepan over a medium heat. Add the chopped onion and carrot, then cook gently for approximately 5 minutes, stirring occasionally, until softened.

3. Add the flavour

Stir in the crushed garlic, grated ginger and mild curry powder, if using. Cook for a further minute to release the flavours, taking care not to burn the garlic.

4. Simmer the soup

Add the diced pumpkin, coconut milk and low-salt stock. Stir well, bring to a gentle simmer and cook for 20 to 25 minutes, or until the pumpkin is completely soft and tender.

5. Blend until smooth

Remove the saucepan from the heat and carefully blend the soup using a hand blender until smooth and creamy. For a thinner consistency, add a little water until you reach your preferred texture.

6. Prepare the grilled sweetcorn

While the soup is simmering, grill the sweetcorn cob in a hot griddle pan until lightly golden and charred. Allow it to cool slightly before carefully slicing the kernels away from the cob.

Toss the sweetcorn with a small pinch of mild paprika. For adults and older children, a little salt can be added if desired. Set aside to use as a colourful topping.

7. Finish with lime

Stir the fresh lime juice into the blended soup. Taste and adjust the flavours if needed, adding a little more lime for extra freshness.

8. Serve and enjoy!

Allow the soup to cool to a safe serving temperature for children. Spoon into bowls and finish with the grilled sweetcorn and a little fresh coriander, if desired.

Serve alongside soft bread, toast fingers or a colourful beetroot roll for a fun Halloween inspired meal.

For younger children, ensure the sweetcorn is served in an age appropriate form and texture.

Making It Perfect for Children

Naturally sweet: Pumpkin and carrot bring a gentle, natural sweetness to the soup without the need for added sugar.

Mild Thai inspired flavours: Coconut milk, ginger and lime create a lovely balance of flavours without the heat of chilli.

Perfect for little taste buds: The smooth, creamy texture makes this soup easy to enjoy, particularly for children who prefer softer foods.

For adventurous eaters: Older children and adults can add extra lime, fresh coriander or a sprinkle of chilli to their own bowls.

Add extra protein: Stir in 100g of cooked red lentils before blending for a heartier, more filling soup.

For younger children: Choose very low salt or homemade unsalted stock, avoid adding salt and adapt the texture and toppings to suit their age and stage of development.

Halloween Pumpkin Tip: Reduce Food Waste!

Halloween is the perfect opportunity to get creative in the kitchen, and this recipe is a brilliant way to make the most of fresh pumpkin.

Rather than throwing away the flesh removed when preparing your pumpkin for carving, why not turn it into a delicious, warming soup for the whole family?

Just remember to use clean, fresh pumpkin flesh removed during preparation, rather than pumpkin that has already been carved and left on display.

It's also a lovely opportunity to involve children in the kitchen, introduce them to seasonal ingredients and start conversations about reducing food waste.

A little Halloween fun, a delicious family meal and less food waste, what's not to love? 🎃
