Blueberry, Banana & Date Muffins

Following lots of lovely feedback at the Nourishing Our Future Conference, we’re delighted to share the recipe for our popular Blueberry, Banana & Date muffins.

They’re soft, naturally sweet, and perfect for little hands (or big ones!).

Ingredients

·         220g dates

·         180g hot water

·         60g soft butter

·         2 eggs

·         225g very ripe banana

·         110g oil

·         2g ground ginger

·         2.5g ground cinnamon

·         5g vanilla

·         12g baking powder

·         100g oats

·         240g self-raising flour

·         100g fresh or frozen blueberries

Method

1.       Soak the dates in the hot water for about 10 to 15 minutes until softened.

2.       Mash or blend the soaked dates with their soaking water until mostly smooth.

3.       Preheat the oven to 170°C fan / 190°C conventional. Prepare a muffin tray.

4.       In a large bowl, whisk together the soft butter, eggs, banana, oil, vanilla, ginger, and cinnamon.

5.       Stir in the date mixture.

6.       Add the oats, self-raising flour, and baking powder. Mix until just combined.

7.       Fold in the blueberries gently.

8.       Pour into the tin, or divide into muffin cases.

9.       Bake: 18 to 20 minutes.

10.   Put a knife down the centre and make sure it comes out clean before removing from the oven.

Notes

·         If using frozen blueberries, defrost them in the bag over a few hours.

·         Do not overmix once the flour goes in.

·         You can also make this as a loaf. Just line a loaf tin and bake for 35 to 40 minutes.
