Ingredients

400g diced chicken
Dash of oil
400g tomato passata
2 tbsp tomato paste
Half a butternut squash, peeled, deseeded and diced
1 tsp mixed mild curry powder
1 large white onion, diced
2 to 3 garlic bulbs, chopped
1 tsp lemon juice
1/2 tsp garam masala
1/2 tsp ground ginger
1/2 tsp paprika
1/2 tsp ground cumin
1/4 tsp turmeric
200 ml water
200ml cream
1/4 bunch chopped coriander

Method

  1. Heat a dash of oil in a pan and add the diced chicken.

  2. Add all spices except the mixed mild curry powder. Cook until the chicken is evenly coated and fully cooked. Set aside.

  3. In a separate pot, sweat down the onion and garlic.

  4. Add the diced butternut squash and the water. Cover the pot and cook until the butternut is soft.

  5. Add the mixed mild curry powder, tomato passata, tomato paste, and lemon juice. Cook gently for 10 to 15 minutes.

  6. Blend the mixture into a smooth paste, then return it to the pan and bring to a high temperature.

  7. Add the cream and the cooked chicken. Stir well and heat through.

  8. Finish with chopped coriander. Do not add salt as this dish is intended for children.

This award-winning Butter Chicken is a perfect example of how healthy, child-friendly ingredients can create a dish full of flavour. It is mild, creamy, and comforting, ideal for little ones while still being delicious enough for the whole family.
