Ingredients (serves 4)
· 500–700g chicken breast, diced
· 1 medium white onion (about 175g), diced
· 1 red pepper, diced
· ½ butternut squash, peeled and diced
· 3–4 garlic cloves, peeled
· 1 litre passata
· 350–500ml water (adjust for thickness)
· 1–2 tsp cornflour (optional, for thickening)
· Salt and pepper (to taste)
· A little oil for frying
Method
Step 1 – Prepare the ingredients
· Dice the chicken breast into bite-sized pieces.
· Roughly chop the onion and red pepper.
· Peel and dice the butternut squash.
· Peel the garlic cloves.
Step 2 – Cook the chicken
· Heat a little oil in a large pan.
· Season the chicken with salt and pepper.
· Fry until golden on the outside (don’t worry if it isn’t fully cooked yet).
· Remove and set aside.
Step 3 – Cook the vegetables
· In the same pan, add a little more oil if needed.
· Fry the onion, red pepper, butternut squash, and garlic until soft and fragrant (about 8–10 minutes).
Step 4 – Make the sauce
· Pour in the passata and 350–500ml water, depending on how thick you like the sauce.
· Stir, bring to a gentle simmer, then use a hand blender (or jug blender) to blend until smooth.
Step 5 – Combine everything
· Return the chicken to the pan.
· Simmer gently for 10–15 minutes, until the chicken is fully cooked through.
· If the sauce feels too thin, mix 1–2 tsp cornflour with a splash of cold water, then stir it in and simmer until thickened.
Step 6 – Taste and serve
· Adjust seasoning with more salt and pepper if needed
· Serve hot with rice, pasta, or bread for dipping
