Zebedees Recipes - Vegetable Massaman Curry

We have created this recipe so that you can make this dish at home.

Ingredients

  • Drop of olive oil

  • Sweet Potato: 1 large peeled and diced

  • Large white onion: fine diced

  • Garlic: 4 bulbs finely diced

  • Small Leek: finely diced

  • 2 peppers (red or yellow): diced

  • ½ of a Cauliflower (steamed & pureed)

  • ¼ teaspoon: Garam masala

  • ¼ teaspoon: Mild curry powder

  • ¼ teaspoon: Dried Ginger

  • 1/2 teaspoon: Mild Thai paste

  • 150g Diced Pineapple

  • 50g Diced apricots

  • 50g Red lentils

  • 1 x Teaspoon low salt vegetable stock

  • Freshly Chopped coriander

  • 500ml Coconut cream

  • 1 x Heaped tbsp: Tomato puree

  • 1 tbspn of corn flour

Method

To start fry off the onion, garlic, leeks, peppers, sweet potato with a drop of olive oil, once the veg starts to soften add your garam masala, dried ginger, mild curry powder and vegetable stock, continue to cook on a lower heat.

Then add your lentils, pineapple, cauliflower puree, diced apricots, tomato puree, mild Thai paste and coconut cream and let it simmer for about 30 mins. If it is still runny just add a little bit of cornflour until it thickens up.

Finish off by adding your fresh coriander and serve with rice of your choice.
