Cake ingredients

350g self raising flour

55g cocoa powder

1 tstp mixed spice

170 ml cooking oil

350g of caster sugar (or raisin puree for replacement to sugar)

1tspn baking powder

3 eggs

3 tspn vanilla essence

150g of grated courgette

150g grated raw and peeled beetroot

150g grated raw and peeled carrot

Icing ingredients

100g milk chocolate

100g dark chocolate

100ml double cream

For the cake

Mix the dry ingredients together in a bowl: flour, cocoa powder, mixed spice, baking powder

In a separate bowl whisk together the eggs, sugar, vanilla essence and then add oil and all 3 grated vegetables

Fold the dry mix into the wet mix

Line a 25cm cake tin with greaseproof paper and pour in your mixture

Bake in a oven @ 170c or gas mark 4, for between 30 to 40 mins or until a knife inserted in the middle comes out clean

Cool in the tin for 10-15 mins and then place on a wire rack to cool completely  

For the icing

Place the chocolate in a bowl and heat up the cream to just before its boiling then pour over the chocolate

Stir it until a smooth mix is formed and let it chill and thicken until it's chilled enough to spread over the cake

Decorate with whatever you would like!
