Sugar Free Banana Loaf Recipe

Ingredients

  • 4 x over ripe bananas

  • 2 x large eggs

  • 120ml Olive oil

  • 50 g unsalted butter

  • 1 x tspn vanilla essence

  • ½  tspn of all spice

  • 250g Self raising flour

  • 1 x tspn of baking powder

  • ½ tspn bicarb of soda

  • Handful of sultanas

 Method

Blend the bananas, oil and butter with the vanilla essence until it becomes a wet paste, then slowly add all of your dry ingredients.

Butter a loaf tin and add your mix into the tin only ¾ full.

Bake in a pre-heated oven  at 160ºC for about an hour, or until a skewer inserted through the centre comes out clean.

Top Tip: Bananas and sultanas are a great source of fibre and can be used to replace sugars in many desserts.
