- 4 x over ripe bananas
- 2 x large eggs
- 120ml Olive oil
- 50 g unsalted butter
- 1 x tspn vanilla essence
- ½ tspn of all spice
- 250g Self raising flour
- 1 x tspn of baking powder
- ½ tspn bicarb of soda
- Handful of sultanas
Blend the bananas, oil and butter with the vanilla essence until it becomes a wet paste, then slowly add all of your dry ingredients.
Butter a loaf tin and add your mix into the tin only ¾ full.
Bake in a pre-heated oven at 160C for about an hour, or until a skewer inserted through the centre comes out clean.
Top Tip: Bananas and sultanas are a great source of fibre and can be used to replace sugars in many desserts.
