Our dedicated managers and their respective teams assist us in fulfilling our promise to provide healthy, nutritious meals to our clients.


Philip Oates, Director

Philip began his career as a Chef at a four-star country hotel before moving on to the prestigious Casino Bern restaurant in Switzerland. On his return to the UK, Philip held the position of Executive Chef at All Bar One, where he designed kitchens, developed menus and led the kitchen team. Philip is responsible for the development and nutritional analysis of all menus at Zebedee's and liaises closely with local authorities and dietitians to ensure that our menus meet the required standards. He leads many projects concerned with the ongoing development of the business.


Steve Parsons, Director

Steve has been in the catering industry for over 25 years and has experience in 4 and 5 star hotels as Food & Beverage Manager and Personnel & Training Manager. He has also worked as General Manager for gastro bars All Bar One and Browns Restaurants in London. Steve manages the Company with his Co-Director and has responsibility for personnel, health and safety and all aspects of food safety. Steve works closely with all managers to ensure that the Company runs cohesively.



Elaine Lodeiro, Client Services Manager

Elaine has worked in the catering and hospitality industry since leaving school. She has worked in a number of 4 star hotels in the South East, mainly in Front Office and Events Management. Elaine oversees all aspects of client management, ensuring that we deliver a professional service and works closely with Alastair in liaising with our schools and nurseries.


Alastair Hill, Client Relations Manager

Alastair has been in the catering and hospitality industry all of his life having been brought up in a family run country restaurant. He has run his own successful retail bakery and tea room restaurant and catered ski chalet company. Alastair is now responsible for client relations and new development within the company, working alongside Elaine in ensuring that our schools and nurseries are fully catered for.


Nadia Timms, Client Services Admin Manager

Nadia spent 12 years working in the Exhibitions & Events industry, managing projects of all sizes in the UK and overseas. As a food lover and mother to two growing boys, she has a keen interest in food and nutrition. Nadia joined Zebedee’s in 2013 to assist Elaine and Alastair in looking after our growing number of clients. She now oversees the admin and computer systems used by the Client Services team, as well as assisting our nurseries and schools with any queries.


Jennifer Brown, Client Services Administrator

Jenny has a strong background in the catering and leisure industry, including working for our sister company, Nibbles Catering, as both a kitchen and office assistant. She has also worked in managerial positions for two well-known pub chains. Jenny joined the Client Services team at Zebedee’s in April 2016 to offer further assistance to our growing client base.


Sarah West, Nutritionist

Sarah joined Zebedee’s as our dedicated Nutritionist in June 2016. She is qualified in her field, holding a BSc Health Sciences Nutrition degree. She has worked for a range of household food manufacturers including Danone and Unilever. She has also produced articles and expert comment for the popular press including The Daily Mail, The Daily Express and Woman magazine. Sarah will be working alongside our chefs on menu planning and design to further improve the quality and variety of our meals. She will also be handling the PR and Marketing for Zebedee’s, to include issuing press releases and writing a food blog.


Tannis Marchesani, Client Services Administrator

Tannis studied locally at Sussex Downs College and has an extensive background in administration, having worked in a variety of roles in this area, including customer advisory positions. She joined Zebedee’s as a Client Services Administrator, further expanding the Client Services Team to provide additional support to this part of the business and our clients.


Dawn Baldock, Client Services Liaison

After leaving catering college, Dawn worked in a variety of positions, including manager of the Drusillas Zoo Park restaurant in Alfriston, East Sussex. She also ran the kitchen for Bosworths Wine Bar, Eastbourne. After a couple of years working in recruitment, Dawn became a full time mother to four children. For 7 years she ran a student accommodation business from home. Dawn now works for Zebedee’s visiting our schools and nurseries and acting as liaison between them and the Client Services Team. Her two passions in life are children and food!



Sarah Armitage, Office Manager

Sarah has been Office Manager at Zebedee's since 2004. In 2009 she took a 2 ˝ year sabbatical to go travelling and returned to Zebedee's in 2011. Sarah has a background in event organising for hotels and previously worked as an admissions organiser for the NHS.
Her responsibilities at Zebedee's involve organising the office's administration systems, personnel and all aspects of invoicing and accounts. She is also pleased to assist clients with any queries regarding orders or our service.


Adrian Oates, Office Manager

Adrian joined our sister company, Nibbles Catering, in 2007 as General Manager. Adrian comes from a background in retail management, and has worked for a variety of respected retailers, including The Disney Store. Adrian was promoted to General Manager of Zebedee’s in March 2015 to oversee the general running of the business, following its continued expansion.


Diana Flowers, Business Administration Manager

Diana has worked in business administration for 15 years. She was previously Office Manager for one of Brighton's leading commercial property agencies, and also worked as Office Manager at Zebedee's for 2˝ years. Her responsibilities in her current role involve handling business contract renewals, updating the website, accounts, dealing with adhoc projects and resolving IT issues.


Louise Wadey, Office Administrator

Louise studied locally at Sussex Downs College obtaining a qualification in Leisure & Recreation. She has worked extensively in a number of catering establishments, including Glyndebourne Opera House. Louise joined our sister company, Nibbles Catering, in 2008 as Deputy Manager. Louise returned from maternity leave in 2013, following the birth of her twin boy and girl, and is now moving across to join the expanding office administration team at Zebedee’s.



Steve Russell, Executive Head Chef

Steve has been in the catering industry for over 20 years. He has worked for various hotels and contract catering companies such as Sodexho and Baxter Storey, running prestigious Government sites in London. Steve manages the kitchen team and all aspects of food ordering, preparation, kitchen cleanliness and food safety.


Zoe Russell, Catering Manager

Zoe has worked in catering for over 15 years. She has worked in London, working and managing various B&I and government contracts for Avenance Catering and Baxter Storey. Zoe’s primary role focuses on HACCP, Food safety, and all kitchen personnel and health and Safety. Zoe has 3 children so is also committed to healthy nutrition in our foods.


Robin Pettitt, Senior Sous Chef

Robin is a classically trained chef who started his career at Claridges in London. After completing his training Robin continued his career working for the Marriott group. He then moved to the prestigious 4 star Croydon Park Hotel, where he spent 9 years working his way up to Sous Chef before joining Zebedees as Senior Sous Chef.


Sam Purvis, Sous Chef

Sam joined the Kitchen team in April 2013 as a chef and was promoted in August 2014 to Sous Chef. He works alongside Robin and Marcin, overseeing the nursery and schools food service. Sam attended catering college and learnt his trade at the Grand Hotel in Eastbourne. He also previously worked for one of our associated catering companies for 2 years.


Marcin Kopiec, Sous Chef

Marcin originally joined the team in 2006 as a kitchen porter, having previously worked in a variety of catering establishments overseas. Since starting with Zebedee’s, Marcin has committed himself to ongoing training, and has progressed to the position of Sous Chef. He now works alongside Robin and Sam, overseeing the nursery and schools food service.



Rob Porter, Transport Manager

Rob has worked in the transport industry for over 30 years in various areas including mechanical, breakdown recovery, delivery and chauffeuring. Rob oversees our team of delivery drivers and manages our fleet of Volkswagen vehicles, making sure that the vehicles are serviced and maintained so that deliveries arrive on time. Rob routinely carries out checks on all vehicles to ensure they meet our strict health and safety standards.


Len Parsons, Fleet Manager

Len spent 16 years in the catering industry, working his way up to the position of Head Chef. The last 20 years he has worked as a Retail Manager, including setting up and running Home Shopping for Asda Eastbourne. Len joined Zebedee’s in October 2014 as Fleet Manager and deals with all administration aspects of managing our fleet, ensuring we are always fully compliant with current legislation.



Mike Stevens, Facilities Manager

Mike joined the team in July 2014 and has a background in fabrication and as a plumbing and heating engineer. He has also managed his own project management business. Mike is responsible for the day to day services of our site, ensuring that we are compliant with all aspects of health & safety and building regulations. He also ensures that our buildings, equipment and facilities are well maintained and kept operational.


Andrew Munday, Stores Manager

Andy joined Zebedee’s in July 2012, as our first ever Storesman. He has a broad range of experience, including delivery driving, catering, retail and stock taking. Andy has now been promoted to Stores Manager at Zebedee’s and his duties include purchasing plus organisation and control of stock.



Sarah Almond, Paediatric Dietitian

Sarah is a Registered Dietitian and Children's Nutritionist who specialises in nutrition for babies and children. She currently works with children in hospitals in East and West Sussex and in nurseries across the UK. She is qualified to degree level with a post graduate diploma in advanced dietetic practice and is currently researching for her PhD. In addition Sarah lectures for the University of Brighton and is the nutritionist for Rachel's Organic and Plum Baby. She is a published author and writes for professional journals alongside Mother & Baby and Pregnancy & Birth magazines. Sarah is also a full time mum to Charlie and Maisie. ELAS, Food Safety Consultants

ELAS are a leading provider of food safety management systems. Zebedee’s are working with ELAS to strengthen our organisation’s due diligence and improve supplier food safety. They undertake third party independent audits every quarter, and assist us in ensuring that our food safety systems always meet the highest possible standards. This is a service that we have chosen to employ, as it is important to us that we continually improve the quality of service that we provide to our clients. ELAS do not take the place of Environmental Health, who we continue to work closely with.
